Filling ingredients
  • 1 lb cooked chicken, shredded (rotisserie chicken works like a charm)
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup diced onions (optional)
  • 1 tsp taco seasoning
  • 4 large flour tortillas (or whole wheat)
  • 1 can green chili sauce (the showstopper)
  • ½ cup additional shredded cheese for topping

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, taco seasoning, diced onions, and 1 cup of shredded cheese. Stir everything together.
Assembly and Baking
  1. Lay the tortillas flat and spoon a generous amount of the chicken filling onto the center of each tortilla. Roll them up tightly.
  2. Pour half of the green chili sauce into a 9×13 inch baking dish. Place the rolled burritos seam-side down.
  3. Pour the remaining green chili sauce over the burritos, and sprinkle with the remaining ½ cup of cheese.
  4. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for another 10-15 minutes until bubbly and golden.
  5. Let the burritos rest for a few minutes before serving.

Notes

These burritos can be made ahead and frozen before baking. Optionally, add diced jalapeños or cayenne pepper for extra spice.
