Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, taco seasoning, diced onions, and 1 cup of shredded cheese. Stir everything together.
Assembly and Baking
- Lay the tortillas flat and spoon a generous amount of the chicken filling onto the center of each tortilla. Roll them up tightly.
- Pour half of the green chili sauce into a 9×13 inch baking dish. Place the rolled burritos seam-side down.
- Pour the remaining green chili sauce over the burritos, and sprinkle with the remaining ½ cup of cheese.
- Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for another 10-15 minutes until bubbly and golden.
- Let the burritos rest for a few minutes before serving.
Notes
These burritos can be made ahead and frozen before baking. Optionally, add diced jalapeños or cayenne pepper for extra spice.
