Filling Ingredients
  • 2 cups cooked chicken, shredded Perfect for leftover rotisserie chicken.
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
Assembly Ingredients
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 4 large flour tortillas
  • 1 can green chili sauce (10 oz)
  • 1 cup sour cream Optional, but highly recommended!
  • Fresh cilantro For garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, cumin, chili powder, and half of the shredded cheese.
  3. Taste the mixture and adjust the spices to your liking.
Assembly
  1. Lay a tortilla flat, and spoon about 1/4 of the chicken mixture into the center.
  2. Add a few spoonfuls of the green chili sauce and roll up the burrito, tucking in the ends.
  3. Place them seam-side down in a greased baking dish.
  4. Pour the remaining green chili sauce over the top and sprinkle with the rest of the cheese.
Baking
  1. Cover the dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serving
  1. Let the burritos cool for a few minutes before serving.
  2. Drizzle a little sour cream and sprinkle some fresh cilantro on top if desired.

Notes

Make it vegetarian by swapping out the chicken for sautéed mushrooms or bell peppers. You can also freeze some before baking for later. Consider putting out a topping bar with avocado, salsa, or jalapeños.
