Ingredients
  

For the Filling
  • 2 cups cooked chicken, shredded or diced for a chunky texture
  • 1 cup cooked rice brown or white
  • 1 can black beans, rinsed and drained 15 oz
  • 1 cup corn kernels frozen, canned, or fresh
  • 1.5 cups shredded cheese cheddar and Monterey Jack blend
  • 1 cup green chili sauce store-bought or homemade
  • 0.5 teaspoon cumin
  • 0.5 teaspoon chili powder
  • Salt and pepper to taste
For the Wrap
  • 6 large flour tortillas

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, half of the cheese, and the green chili sauce. Season with cumin, chili powder, salt, and pepper. Stir until evenly mixed.
  3. Place a tortilla on a clean surface. Spoon about ½ cup of the chicken mixture onto the center of the tortilla. Roll it tightly, tucking in the sides as you go.
  4. In a greased baking dish, place the rolled burritos seam-side down. Pour any leftover sauce over the top and sprinkle with the remaining cheese.
Baking
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Notes

You can prep these burritos hours or days in advance and store them wrapped in foil or plastic wrap in the fridge. Feel free to add extra veggies like zucchini or bell peppers for added nutrition. If your sauce looks a little lumpy, it's all part of the magic!
