Baked Chicken Burritos with Creamy Green Chile Sauce

Ingredients
  

For the Burritos
  • 2 cups cooked, shredded chicken can use rotisserie chicken
  • 1 cup cooked rice brown or white, your choice
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen works well
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 8 pieces flour tortillas the bigger, the better
  • 1 teaspoon taco seasoning for added spice
For the Creamy Green Chile Sauce
  • 1 can green chiles diced
  • 1 cup sour cream low-fat if preferred
  • 1 cup chicken broth homemade or store-bought
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, taco seasoning, and half of the shredded cheese. Mix until well combined.
  3. Lay a tortilla flat, scoop about ½ cup of the chicken mixture onto the lower half, roll it tightly, and place seam-side down in a greased baking dish.
  4. Repeat with the remaining tortillas and chicken mixture.
  5. In a separate bowl, mix together sour cream, green chiles, chicken broth, garlic powder, salt, and pepper.
  6. Pour the sauce over the assembled burritos.
  7. Sprinkle remaining cheese on top.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until the cheese is melty and bubbly.
  2. Allow to cool for a couple of minutes before serving.

Notes

You can prep the burritos ahead and refrigerate them. Increase baking time by 10 minutes if baking from cold. For variety, mix different types of cheese or add vegetables for a meat-free option. Leftovers can be stored in an airtight container for up to 3 days.
