Preparation
- Preheat your oven to 350°F (175°C).
- In a medium-sized mixing bowl, whisk together the cottage cheese, eggs, salt, and pepper until combined. Add any optional veggies or herbs.
- Stir in the shredded cheese.
- Grease an 8x8 inch baking dish and pour in the cottage cheese mixture. Optionally sprinkle extra cheese on top.
Baking
- Pop the dish in the oven and bake for 30-35 minutes, or until firm to the touch and bubbling.
- Once done, slice and serve warm, ideally with avocado or fresh fruit.
Notes
This dish is flexible; you can substitute cottage cheese with ricotta or Greek yogurt. Store leftovers in an airtight container for easy reheating. Add spices for extra flavor.
