  • 1/2 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium-sized mixing bowl, whisk together the cottage cheese, eggs, salt, and pepper until combined. Add any optional veggies or herbs.
  3. Stir in the shredded cheese.
  4. Grease an 8x8 inch baking dish and pour in the cottage cheese mixture. Optionally sprinkle extra cheese on top.
Baking
  1. Pop the dish in the oven and bake for 30-35 minutes, or until firm to the touch and bubbling.
  2. Once done, slice and serve warm, ideally with avocado or fresh fruit.

Notes

This dish is flexible; you can substitute cottage cheese with ricotta or Greek yogurt. Store leftovers in an airtight container for easy reheating. Add spices for extra flavor.
