  • 1 block block of feta cheese (8oz)
  • 1 cup pitted olives (mix of green and black) Colorful mix recommended
  • 1/2 cup sun-dried tomatoes (packed in oil) Enhances flavor
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes Optional for added spice
  • 2-3 tablespoons olive oil Extra virgin is best
  • to taste Fresh herbs for garnish Basil or parsley works beautifully

Method
 

Preparation
  1. Preheat the Oven: Set your oven to 400°F (200°C).
  2. Prepare Your Baking Dish: Place your block of feta right in the center of an oven-safe dish.
  3. Add the Good Stuff: Scatter olives and sun-dried tomatoes around the feta. Sprinkle minced garlic on top. Optionally, add red pepper flakes for heat.
  4. Drizzle and Shine: Generously drizzle olive oil over the feta and veggies.
  5. Bake it Up: Place the dish in the oven and bake for 20-25 minutes until the feta is soft and slightly golden.
  6. Garnish and Serve: Sprinkle fresh herbs on top, serve warm with crusty bread or crackers.

Notes

Substitutions: Capers or roasted red peppers can replace olives. For extra flavor, add balsamic vinegar before baking.
