  • 4 medium-sized potatoes (Russet or Yukon Gold) Skin-on for flavor and nutrition.
  • 3 tablespoons olive oil Hello healthy fats!
  • 4 cloves garlic (minced) Because we can't have too much garlic!
  • 1/2 cup grated Parmesan cheese Because cheese makes everything better!
  • 1 teaspoon paprika Smoky flavor boost!
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley (for garnish) Optional for garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice the potatoes into wedges. No need to peel.
  3. In a large bowl, combine the olive oil, minced garlic, grated parmesan, paprika, salt, and black pepper. Stir together until it looks like a flavorful paste.
  4. Toss the potato wedges in the mixture until they’re well-coated.
  5. Arrange the wedges in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes, flipping the wedges halfway through.
  2. Garnish with fresh parsley before serving.

Notes

For extra crispy wedges, soak potato wedges in cold water for about 30 minutes before seasoning. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for extra crispiness.
