Main Ingredients
  • 4 pieces cod fillets (around 6 ounces each)
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese the magical ingredient
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • to taste Salt and pepper
  • 1/4 cup melted butter or olive oil, if you’re feeling fancy
  • for garnish Fresh parsley optional, but who can resist a little green?

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse your cod fillets under cold water and pat them dry with a paper towel.
  3. In a medium bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip each cod fillet into the melted butter (or olive oil) then press it into the breadcrumb mixture.
Baking
  1. Place the coated fillets on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for about 12-15 minutes, or until the fish is flaky and the crust is golden brown.
  3. Once out of the oven, sprinkle with fresh parsley for a pop of color and serve hot.

Notes

If you're out of Parmesan, try using another cheese or even crushed nuts for an extra crunch! Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for the best results.
