Main ingredients
  • 4 pieces ripe pears (Bartlett or Bosc work best) Choose slightly underripe pears for best results.
  • 4 ounces blue cheese, crumbled Can substitute with goat cheese or feta.
  • 1/4 cup walnuts, chopped Optional but recommended for added crunch.
  • 2 tablespoons honey Or maple syrup for a vegan option.
  • 1 teaspoon fresh thyme leaves Or rosemary if preferred.
  • 1 tablespoon olive oil For drizzling on the pears.
  • to taste salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Halve each pear lengthwise and remove the core, leaving the skin on if desired.
  3. Arrange the pear halves cut side up in a baking dish. Drizzle with olive oil and sprinkle with salt and pepper.
Stuffing and Baking
  1. Divide the crumbled blue cheese amongst the pear halves.
  2. Sprinkle the chopped walnuts on top, and add thyme or rosemary.
  3. Drizzle honey (or maple syrup) over the stuffed pears.
  4. Bake in the oven for about 20-25 minutes, until the pears are tender and the cheese is melted.
Serving
  1. Serve warm, garnishing with leftover herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to two days. Reheat before serving.
