Preparation
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface until it’s about 1/8 inch thick.
- Cut the pastry into squares or circles (about 4 inches in diameter).
- In a bowl, combine the shredded cheese, chopped rosemary, salt, and pepper. Mix well.
- Place a generous spoonful of the cheese mixture in the center of each pastry piece.
- Fold the pastry over, sealing the edges well. Use a fork to crimp them shut.
- Brush the tops with beaten egg for a golden finish.
Baking
- Bake in the preheated oven for about 15-20 minutes or until they’re puffed and beautifully golden brown.
- Garnish with extra rosemary and serve warm.
Notes
Work quickly with the puff pastry; it's better when cold. You can freeze these pastries before baking for later use.
