Ingredients
  

Main Ingredients
  • 1 sheet 1 sheet of puff pastry (thawed)
  • 1 cup 1 cup of shredded cheese (mozzarella, cheddar, or your favorite blend) Feel free to mix cheeses for more flavor.
  • 2 tablespoons 2 tablespoons of fresh rosemary (chopped, with a sprinkle for garnish)
  • 1 large 1 egg (beaten, for egg wash)
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface until it’s about 1/8 inch thick.
  3. Cut the pastry into squares or circles (about 4 inches in diameter).
  4. In a bowl, combine the shredded cheese, chopped rosemary, salt, and pepper. Mix well.
  5. Place a generous spoonful of the cheese mixture in the center of each pastry piece.
  6. Fold the pastry over, sealing the edges well. Use a fork to crimp them shut.
  7. Brush the tops with beaten egg for a golden finish.
Baking
  1. Bake in the preheated oven for about 15-20 minutes or until they’re puffed and beautifully golden brown.
  2. Garnish with extra rosemary and serve warm.

Notes

Work quickly with the puff pastry; it's better when cold. You can freeze these pastries before baking for later use.
