  • 2 pieces salmon fillets (about 6 ounces each)
  • 1 bunch asparagus (trimmed)
  • 4 tablespoons unsalted butter (melted)
  • 2 cloves garlic (minced)
  • 1 juice lemon (juiced and sliced)
  • to taste salt and pepper
  • for garnish fresh parsley (optional) Lovely garnish that adds color

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut two large sheets of aluminum foil to wrap the salmon and asparagus.
  3. Lay the salmon fillets on one half of each foil sheet and arrange the asparagus around the salmon.
  4. In a small bowl, combine the melted butter, minced garlic, lemon juice, salt, and pepper. Drizzle over the salmon and asparagus.
  5. Lay a few lemon slices over the salmon.
  6. Fold the foil over the salmon and asparagus, crimping the edges to create a pocket.
Cooking
  1. Place the foil packets on a baking sheet and bake for about 15-20 minutes until salmon flakes easily with a fork.
Serving
  1. Carefully open the foil and transfer everything to a plate. Garnish with fresh parsley if desired.

Notes

Don't worry if your sauce looks lumpy before pouring; it's part of the charm. You can substitute asparagus with green beans or broccoli. For added spice, toss in red pepper flakes.
