Preparation
- Preheat your oven to 375°F (190°C).
- Cut two large sheets of aluminum foil to wrap the salmon and asparagus.
- Lay the salmon fillets on one half of each foil sheet and arrange the asparagus around the salmon.
- In a small bowl, combine the melted butter, minced garlic, lemon juice, salt, and pepper. Drizzle over the salmon and asparagus.
- Lay a few lemon slices over the salmon.
- Fold the foil over the salmon and asparagus, crimping the edges to create a pocket.
Cooking
- Place the foil packets on a baking sheet and bake for about 15-20 minutes until salmon flakes easily with a fork.
Serving
- Carefully open the foil and transfer everything to a plate. Garnish with fresh parsley if desired.
Notes
Don't worry if your sauce looks lumpy before pouring; it's part of the charm. You can substitute asparagus with green beans or broccoli. For added spice, toss in red pepper flakes.
