Preparation of Balsamic Reduction
- In a small saucepan over medium heat, combine the balsamic vinegar and blackberries. Stir occasionally and bring it to a gentle simmer.
- Cook for about 10-15 minutes, or until the mixture thickens. Stir in a pinch of salt and pepper to taste.
Assembly of Sandwich
- Heat a skillet over medium heat and add the olive oil.
- Place one slice of bread in the skillet, and layer it with fresh mozzarella and a generous drizzle of the balsamic reduction.
- Top it with the second slice of bread.
Grilling the Sandwich
- Cook for 3-4 minutes on one side until golden and toasty.
- Flip and cook the other side until the cheese is melty and gooey (about another 3-4 minutes).
Serving
- Once perfectly grilled, remove from heat, slice, and serve while hot.
- Drizzle additional balsamic reduction on top if you’re feeling fancy.
Notes
Don’t stress about perfecting your flip! If your grilled cheese doesn’t make it to Instagram-worthy, it’ll still taste amazing. If you’re craving an even sweeter bite, consider adding honey or brown sugar to your balsamic mixture. Leftover balsamic reduction? Store it in a jar in the fridge to use on salads or desserts.
