  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9x13 inch baking pan (or two round cake pans).
Mixing
  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  2. Beat in the eggs one at a time, then add the mashed bananas and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Mix just until combined.
Baking
  1. Pour the batter into the prepared pan(s) and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool completely in the pan before frosting.
Frosting Preparation
  1. In a large bowl, beat together the softened cream cheese and butter until smooth.
  2. Gradually add in the powdered sugar and vanilla extract.
  3. Spread the frosting generously over the cooled banana cake.

Notes

Store leftovers in an airtight container in the refrigerator for 4-5 days. For added texture, consider mixing in some chopped nuts or chocolate chips into the cake batter.
