Preparation
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9x13 inch baking pan (or two round cake pans).
Mixing
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in the eggs one at a time, then add the mashed bananas and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Mix just until combined.
Baking
- Pour the batter into the prepared pan(s) and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan before frosting.
Frosting Preparation
- In a large bowl, beat together the softened cream cheese and butter until smooth.
- Gradually add in the powdered sugar and vanilla extract.
- Spread the frosting generously over the cooled banana cake.
Notes
Store leftovers in an airtight container in the refrigerator for 4-5 days. For added texture, consider mixing in some chopped nuts or chocolate chips into the cake batter.
