Ingredients
  

For the Cake
  • 3 pieces ripe bananas (the browner, the better!)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the banana mixture, stirring until just combined.
Baking
  1. Pour the batter into a greased 9-inch round cake pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Frosting
  1. While the cake is cooling, beat together the softened cream cheese and butter until smooth.
  2. Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Whip it until fluffy.
Assembly
  1. Once the cake has cooled, frost the top with the cream cheese frosting.
  2. If you’ve made two layers, add frosting between the layers and around the sides.
  3. Slice into the cake and serve.

Notes

Ripe bananas are key for the best flavor. For extra moisture, consider adding sour cream or Greek yogurt to the batter. If the frosting is too soft, chill it before spreading.
