Ingredients
  

For the Banana Cake
  • 1.5 cups mashed ripe bananas (about 4 bananas) The riper the bananas, the sweeter they’ll be.
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cups buttermilk (or milk with a splash of vinegar) Can substitute with milk mixed with vinegar.
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 0.5 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk (or as needed) Use to achieve desired frosting consistency.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease your favorite cake pan with butter or cooking spray, or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Mix in the mashed bananas and vanilla extract.
  5. Gradually add the dry mix to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined.
Baking
  1. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely on a wire rack.
Frosting
  1. Beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar, mixing until smooth. Add vanilla and just enough milk to achieve desired consistency.
  2. Spread the cream cheese frosting over the cooled cake.

Notes

Ripe bananas are key for sweetness; store leftovers covered in the fridge for up to a week. Variations: add a pinch of cinnamon or crushed nuts to the frosting for extra flavor.
