Preparation
- Preheat the oven to 350°F (175°C). Grease your favorite cake pan with butter or cooking spray, or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Mix in the mashed bananas and vanilla extract.
- Gradually add the dry mix to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined.
Baking
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely on a wire rack.
Frosting
- Beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar, mixing until smooth. Add vanilla and just enough milk to achieve desired consistency.
- Spread the cream cheese frosting over the cooled cake.
