Ingredients
  

For the Sausage and Onion Gravy
  • 6 pieces high-quality sausages (pork or your favorite plant-based option)
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 cups beef or vegetable broth
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • to taste Salt and pepper to taste
For the Mashed Potatoes
  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • ½ cup milk (or cream for a bit of extravagance)
  • to taste Salt to taste

Method
 

Cooking the Sausages
  1. Heat the olive oil in a large skillet over medium heat. Add the sausages and cook them for about 10-12 minutes, turning occasionally until they’re browned and cooked through.
Sautéing the Onions
  1. Remove the sausages from the skillet and set them aside. In the same skillet, add the sliced onions. Sauté them for about 5-7 minutes until they’re soft and golden.
Making the Gravy
  1. Sprinkle the flour over the onions and stir for a minute. Gradually pour in the broth, whisking to avoid lumps. Stir in the Worcestershire sauce and season with salt and pepper. Bring to a simmer and reduce heat to thicken for a few minutes.
Preparing the Mashed Potatoes
  1. Boil the cubed potatoes in salted water until they’re tender, about 15 minutes. Drain well and mash them with butter and milk (or cream) until smooth. Season with salt to taste.
Serving
  1. Place a scoop of mashed potatoes on each plate, top with sausages, and drizzle onion gravy over everything.

Notes

Make mashed potatoes ahead of time and reheat with milk. Experiment with different sausage flavors like spicy, garlic, or apple chicken.
