Preparation
- Season your sliced chicken with salt and pepper.
- In a large skillet over medium heat, add olive oil and sauté the chicken for about 5-7 minutes until it’s golden brown and cooked through.
- In the same pan, add minced garlic and grated ginger. Let those flavors mingle for about a minute.
Cooking
- Stir in the red curry paste and let it simmer for about 2 minutes.
- Pour in the coconut milk, along with the fish sauce and lime juice. Stir and reduce the heat. Let it simmer for 10 minutes.
- Fold in your freshly chopped basil and let it wilt just a bit.
- Taste the sauce and adjust for seasoning.
- Serve the basil chicken over a bed of rice or noodles.
Notes
If you’re in a pinch, substitute basil with cilantro or parsley. For extra kick, add diced chilies or crushed red pepper.
