  • 1 lb chicken breasts, sliced into thin strips
  • 1 can coconut milk (14 oz)
  • 1 cup fresh basil leaves, chopped
  • 2 tbsp red curry paste adjust to taste
  • 1 tbsp fish sauce or soy sauce for a vegetarian option
  • 1 tbsp lime juice fresh is best
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: Cooked rice or noodles for serving

Method
 

Preparation
  1. Season your sliced chicken with salt and pepper.
  2. In a large skillet over medium heat, add olive oil and sauté the chicken for about 5-7 minutes until it’s golden brown and cooked through.
  3. In the same pan, add minced garlic and grated ginger. Let those flavors mingle for about a minute.
Cooking
  1. Stir in the red curry paste and let it simmer for about 2 minutes.
  2. Pour in the coconut milk, along with the fish sauce and lime juice. Stir and reduce the heat. Let it simmer for 10 minutes.
  3. Fold in your freshly chopped basil and let it wilt just a bit.
  4. Taste the sauce and adjust for seasoning.
  5. Serve the basil chicken over a bed of rice or noodles.

Notes

If you’re in a pinch, substitute basil with cilantro or parsley. For extra kick, add diced chilies or crushed red pepper.
