For the Ribs
  • 2 pounds beef ribs
  • 2 pounds pork ribs
  • 2 cups BBQ sauce store-bought or homemade
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
For the Sides
  • 4 large russet potatoes for fries
  • 1 large onion for onion rings
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • Oil for frying
  • Salt and pepper to taste

Method
 

Preparation
  1. In a bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture generously over both the beef and pork ribs.
  2. Let them soak in the flavors for at least an hour (or overnight in the fridge if you can plan ahead).
Cooking the Ribs
  1. Preheat your grill to medium heat. Place the ribs bone-side down and cook for about 2 hours, basting them with BBQ sauce halfway through.
Preparing the Sides
  1. Wash and cut the russet potatoes into fries. Toss them in oil, salt, and pepper, then bake at 425°F until crispy (about 30-40 minutes, turning halfway).
  2. Slice your onion into rings. Soak them in buttermilk for about 30 minutes. Drain and coat with flour, seasoning with salt and pepper.
  3. Heat oil in a pot, and fry the coated onion rings until golden and crispy.
Serving
  1. Plate the ribs alongside the crisp fries and golden onion rings. Drizzle extra BBQ sauce on top if desired.
