- In a bowl, mix garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture generously over both the beef and pork ribs.
- Let them soak in the flavors for at least an hour (or overnight in the fridge if you can plan ahead).
Cooking the Ribs
- Preheat your grill to medium heat. Place the ribs bone-side down and cook for about 2 hours, basting them with BBQ sauce halfway through.
Preparing the Sides
- Wash and cut the russet potatoes into fries. Toss them in oil, salt, and pepper, then bake at 425°F until crispy (about 30-40 minutes, turning halfway).
- Slice your onion into rings. Soak them in buttermilk for about 30 minutes. Drain and coat with flour, seasoning with salt and pepper.
- Heat oil in a pot, and fry the coated onion rings until golden and crispy.
Serving
- Plate the ribs alongside the crisp fries and golden onion rings. Drizzle extra BBQ sauce on top if desired.
