Preparation
- Start by preheating your grill to medium heat.
- Pat the beef ribs dry with a paper towel to ensure a better sear.
Marinating
- In a small bowl, mix together the marinade ingredients: soy sauce, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, and smoked paprika. Add a pinch of salt and pepper to taste.
- Pour half the marinade over the beef ribs, coating them well. Toss in the olive oil for good measure. Allow them to marinate in the fridge for at least 30 minutes (or up to overnight if you’re planning ahead).
Grilling
- Once marinated, bring the ribs out and let them sit at room temperature for about 10 minutes.
- Grease your grill to prevent sticking and place the beef ribs on the grill, bone side down.
- Cook for about 25-30 minutes, turning occasionally, and brush on the remaining marinade during the last few minutes of grilling.
Serving
- Remove the ribs from the grill and let them rest for about 5 minutes before serving.
- Serve with your favorite sides like coleslaw, cornbread, or baked beans.
Notes
Patience is key for the best flavor. If grilling isn’t possible, you can roast the ribs covered with foil at 275°F for about 2.5 hours, then glaze and broil for a char. Let the ribs rest before serving to redistribute juices.
