Ingredients

Main Ingredients
  • 1 pound beef (sirloin or flank steak), sliced thinly
  • 2 cups broccoli florets (fresh or frozen)
  • ¼ cup soy sauce (low sodium)
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil (or sesame oil for added flavor)
  • 1 tablespoon ginger, minced Fresh is best, but powdered works too.
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar To balance out the savory sauce.
  • to taste cooked rice or noodles for serving

Method

Preparation
  1. Start by slicing your beef into thin strips. A tip from my cooking adventures: freeze the beef for about 30 minutes to make slicing easier.
Marination
  1. In a bowl, combine the soy sauce, ginger, garlic, and brown sugar. Toss in the sliced beef, coating it well, then sprinkle cornstarch over the mixture. Let this marinate while you prepare the veggies.
Cooking
  1. Heat your vegetable oil in a large skillet or wok over medium-high heat. Once it’s shimmering, add the beef in a single layer. Sauté for about 3-4 minutes or until it’s browned and just cooked through.
  2. Toss in the broccoli florets and stir-fry for another 3-4 minutes.
  3. Once the broccoli is bright green and tender, pour any remaining marinade over the dish. Stir it all together and cook for an additional minute.
Serving
  1. Serve your Beef and Broccoli over a bed of hot rice or noodles.

Notes

Cooking Tips: Don’t overcrowd the pan; if cooking a lot of beef, do it in batches to achieve sear marks. Feel free to include other veggies like bell peppers or snap peas for variety. For extra heat, add some red pepper flakes to the sauce.
