- In a large pot, heat a splash of oil over medium-high heat. Toss in the beef stew meat and sear until it's beautifully browned on all sides.
- Add the chopped onion, carrots, celery, and garlic to the pot. Sauté for about 5 minutes until the veggies are soft.
- Stir in the barley, beef broth, and water. Add in the thyme and rosemary.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 hours.
