  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 cup pearl barley
  • 4 cups beef broth
  • 2 cups water
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots diced
  • 2 stalks celery, diced
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Cooking Steps
  1. In a large pot, heat a splash of oil over medium-high heat. Toss in the beef stew meat and sear until it's beautifully browned on all sides.
  2. Add the chopped onion, carrots, celery, and garlic to the pot. Sauté for about 5 minutes until the veggies are soft.
  3. Stir in the barley, beef broth, and water. Add in the thyme and rosemary.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 hours.
  5. Once the beef is tender and the barley has absorbed the flavors, season with salt and pepper to taste. Sprinkle with fresh parsley before serving.

Notes

The flavors develop beautifully overnight, making it great for meal prep. You can freeze leftovers for up to three months. Feel free to add seasonal vegetables for variety.
