Preparation
- Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast them for about 30 minutes, or until they're beautifully browned.
- Transfer the roasted bones to a large pot. Add the beef stock, red wine, tomato paste, onion, carrots, celery, garlic, and thyme.
Cooking
- Bring everything to a gentle boil, then reduce the heat and let it simmer for about 2-3 hours.
- After it’s done simmering, strain the mixture through a fine mesh sieve into a bowl. Discard the solids.
- For a more intense flavor, return it to the pot and let it reduce for another 15-20 minutes. This step is optional.
- Taste and add salt and pepper as needed.
Serving
- Drizzle over your favorite protein or veggies and enjoy!
Notes
If you have leftovers, store in an airtight container in the fridge for up to 3 days or freeze. If the sauce looks a bit lumpy, don’t worry; it adds charm to the dish!
