Ingredients
  

Main Ingredients
  • 2 pounds beef bones (knuckles or shanks) Best types for deep flavor.
  • 4 cups low-sodium beef stock Use low sodium for better control of seasoning.
  • 1 cup red wine Choose a wine you enjoy drinking.
  • 1 tablespoon tomato paste
  • 1 onion, quartered No need to chop.
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste Adjust based on preference.

Preparation
  1. Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast them for about 30 minutes, or until they're beautifully browned.
  2. Transfer the roasted bones to a large pot. Add the beef stock, red wine, tomato paste, onion, carrots, celery, garlic, and thyme.
Cooking
  1. Bring everything to a gentle boil, then reduce the heat and let it simmer for about 2-3 hours.
  2. After it’s done simmering, strain the mixture through a fine mesh sieve into a bowl. Discard the solids.
  3. For a more intense flavor, return it to the pot and let it reduce for another 15-20 minutes. This step is optional.
  4. Taste and add salt and pepper as needed.
Serving
  1. Drizzle over your favorite protein or veggies and enjoy!

Notes

If you have leftovers, store in an airtight container in the fridge for up to 3 days or freeze. If the sauce looks a bit lumpy, don’t worry; it adds charm to the dish!
