- Once the beets have cooled, toss the mixed greens in a large bowl. Drizzle with the dressing and mix gently.
- Add the diced roasted beets, crumbled goat cheese, and chopped pistachios on top.
- Toss lightly again, keeping the layers intact for presentation.
- Serve immediately or let it sit for a few minutes to allow the flavors to mingle.
