Preparation
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, cream together the butter and sugar until fluffy. Add the eggs one at a time, followed by the buttermilk and vanilla extract, mixing until smooth.
- Fold in the purple food coloring until well mixed.
- In another bowl, mix the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Baking
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Frosting and Serving
- Beat together the cream cheese and butter until smooth, gradually adding the powdered sugar and vanilla.
- Once the cakes are cool, frost them generously and top with purple sprinkles.
