Ingredients
  

For the Cake
  • 2 ½ cups all-purpose flour Sifted for lighter texture.
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened Room temperature for easy mixing.
  • 1 cup buttermilk, room temperature Can be substituted with milk and vinegar.
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon purple food coloring
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • to taste purple sprinkles Optional, for decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the butter and sugar until fluffy. Add the eggs one at a time, followed by the buttermilk and vanilla extract, mixing until smooth.
  3. Fold in the purple food coloring until well mixed.
  4. In another bowl, mix the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Baking
  1. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Frosting and Serving
  1. Beat together the cream cheese and butter until smooth, gradually adding the powdered sugar and vanilla.
  2. Once the cakes are cool, frost them generously and top with purple sprinkles.

Notes

For best results, use room temperature ingredients and keep an eye on the cakes after 25 minutes of baking to avoid over-baking.
