Ingredients
  

For the Black Bean Burgers
  • 1 can 15 oz black beans, drained and rinsed
  • 1/2 cup breadcrumbs (panko for extra crunch)
  • 1/4 cup finely chopped onion
  • 1/4 cup corn (frozen works just fine)
  • 1 clove garlic, minced Or a pinch of store-bought minced garlic
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • Olive oil for cooking For frying the patties
For the Bowls
  • 2 cups cooked quinoa or brown rice Use leftovers if available
  • 1 cup cherry tomatoes, halved
  • 1 whole avocado, sliced For garnish
  • 1/2 cup shredded cheese (optional) For extra flavor
  • Fresh cilantro for garnish If desired

Method
 

Preparation
  1. Mash the black beans using a fork or potato masher until chunky but not pureed.
  2. Mix in the breadcrumbs, chopped onion, corn, garlic, cumin, chili powder, salt, and pepper until well combined.
  3. Form the mixture into burger patties.
Cooking
  1. In a skillet over medium heat, drizzle olive oil and fry the patties for about 4 minutes on each side until crispy and golden-brown.
Assembly
  1. Place a base of quinoa or brown rice in each bowl.
  2. Top with the black bean patties, cherry tomatoes, avocado slices, cheese, and cilantro.

Notes

If the mixture feels too wet, add extra breadcrumbs. For an optional kick, you can add a dash of hot sauce or lime juice. If your kids are picky, you can serve these as sliders.
