Ingredients
  

For The Cake
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Important for batter consistency
For The Filling
  • 1 jar Morello cherries, drained and juice reserved (24 oz)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
For The Topping
  • to taste Chocolate shavings For decoration
  • to taste Additional cherries For decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until evenly distributed.
  3. Add the eggs, milk, vegetable oil, and vanilla extract into the bowl. Mix on medium speed for about 2 minutes until well-combined.
  4. Carefully stir in the boiling water. Pour this mixture into two greased 9-inch round cake pans.
  5. Bake for 30–35 minutes or until a toothpick comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Whipping Cream
  1. In a mixing bowl, pour your heavy whipping cream and add the powdered sugar and vanilla. Whip until medium peaks form.
Assembly
  1. Place one layer of cake on a serving plate. Drizzle some reserved cherry juice over it, followed by a generous layer of whipped cream and a few cherries.
  2. Add the second layer of cake and repeat the process.
  3. Spread the remaining whipped cream over the top and sides of the cake.
  4. Sprinkle chocolate shavings over the top and place more cherries in the center.
Serving
  1. Cut a slice and enjoy!

Notes

You can use frozen cherries or even raspberries if needed. For a quicker option, a box mix can be utilized.
