Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until evenly distributed.
- Add the eggs, milk, vegetable oil, and vanilla extract into the bowl. Mix on medium speed for about 2 minutes until well-combined.
- Carefully stir in the boiling water. Pour this mixture into two greased 9-inch round cake pans.
- Bake for 30–35 minutes or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Whipping Cream
- In a mixing bowl, pour your heavy whipping cream and add the powdered sugar and vanilla. Whip until medium peaks form.
Assembly
- Place one layer of cake on a serving plate. Drizzle some reserved cherry juice over it, followed by a generous layer of whipped cream and a few cherries.
- Add the second layer of cake and repeat the process.
- Spread the remaining whipped cream over the top and sides of the cake.
- Sprinkle chocolate shavings over the top and place more cherries in the center.
Serving
- Cut a slice and enjoy!
Notes
You can use frozen cherries or even raspberries if needed. For a quicker option, a box mix can be utilized.
