Ingredients
  

Coffee Mixture
  • 2 cups strong brewed coffee (cooled) Make sure the coffee is cooled before use.
  • 1/2 cup coffee liqueur Optional, but highly recommended for adults.
Filling and Topping
  • 1 1/2 cups mascarpone cheese Can substitute with cream cheese.
  • 1 cup heavy cream Whipped until soft peaks form.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups chocolate cake crumbs Store-bought or homemade.
  • 1 cup cherry pie filling Alternatives: fresh cherries.

Method
 

Preparation
  1. In a large bowl, combine your cooled coffee and coffee liqueur (if using). Let that sit for a moment while you get everything else ready.
  2. In another large bowl, whip the heavy cream until soft peaks form. Then fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
Layering
  1. Take your ladyfinger biscuits (or sponge cake), dip them briefly into the coffee mixture, and start layering them in a 9×13 inch dish.
  2. Spread half of the mascarpone mixture on top of the first layer of ladyfingers.
  3. Sprinkle half of the cherry pie filling over the mascarpone layer.
  4. Repeat the ladyfinger dipping, another layer of mascarpone, and top it with the remaining cherry filling.
Chilling and Serving
  1. Cover the dish and put it in the fridge for at least 4 hours (or overnight if possible).
  2. When ready to serve, sprinkle some extra chocolate cake crumbs or cocoa powder on top.

Notes

This dessert gets better with time, so feel free to make it a day ahead. You can use fresh, jarred, or rich cherry preserves for variation. Add chocolate shavings on top for extra decadence.
