Preparation
- In a large bowl, combine your cooled coffee and coffee liqueur (if using). Let that sit for a moment while you get everything else ready.
- In another large bowl, whip the heavy cream until soft peaks form. Then fold in the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
Layering
- Take your ladyfinger biscuits (or sponge cake), dip them briefly into the coffee mixture, and start layering them in a 9×13 inch dish.
- Spread half of the mascarpone mixture on top of the first layer of ladyfingers.
- Sprinkle half of the cherry pie filling over the mascarpone layer.
- Repeat the ladyfinger dipping, another layer of mascarpone, and top it with the remaining cherry filling.
Chilling and Serving
- Cover the dish and put it in the fridge for at least 4 hours (or overnight if possible).
- When ready to serve, sprinkle some extra chocolate cake crumbs or cocoa powder on top.
Notes
This dessert gets better with time, so feel free to make it a day ahead. You can use fresh, jarred, or rich cherry preserves for variation. Add chocolate shavings on top for extra decadence.
