Preparation
- Brew a strong cup of coffee and let it chill. If desired, mix in the coffee liqueur.
- In a mixing bowl, combine the heavy whipping cream, granulated sugar, and vanilla extract. Whip until soft peaks form.
- In a separate bowl, gently fold the mascarpone cheese into the whipped cream mixture.
Assembly
- Dip the chocolate cake crumbs briefly into the coffee mixture and layer at the bottom of your serving dish.
- Spoon half of the mascarpone mixture over the cake and scatter half of the cherries on top.
- Repeat the layers until ingredients are used up.
- Finish with a layer of mascarpone and dust with cocoa powder or dark chocolate shavings.
Chilling
- Cover and let your dessert chill in the fridge for at least four hours, or overnight for best flavor.
