Ingredients
  

For the Stir-Fry
  • 1 pound flank steak or sirloin, thinly sliced Cut against the grain for tenderness.
  • 2 cups green beans, trimmed Feel free to substitute with bell peppers, broccoli, or snap peas.
  • 8 ounces mushrooms, sliced Button or shiitake work wonderfully.
  • 2 tablespoons vegetable oil Use any oil from your pantry.
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced A little ginger goes a long way.
For the Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce Enhances the flavor.
  • 1 tablespoon black pepper Freshly ground is best.
  • 1 teaspoon cornstarch To thicken the sauce.
  • 2 tablespoons water

Method
 

Preparation
  1. Slice the flank steak and mushrooms, and trim the green beans.
Making the Sauce
  1. In a small bowl, whisk together the soy sauce, oyster sauce, black pepper, cornstarch, and water.
Cooking the Beef
  1. Heat vegetable oil in a large skillet or wok over medium-high heat until sizzling.
  2. Add sliced beef and stir-fry for about 3-4 minutes or until browned. Avoid overcrowding the pan.
Adding the Vegetables
  1. Add garlic, ginger, green beans, and mushrooms to the skillet and stir-fry for another 3-5 minutes.
Final Touches
  1. Pour in the sauce and stir everything together until the beef is coated and the sauce thickens slightly. Cook for a couple more minutes.
Serving
  1. Serve hot over steamed rice or noodles.

Notes

Perfect the beef by cutting against the grain. Feel free to customize the vegetables. Add red pepper flakes for heat if desired.
