Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
- Mix in the eggs, one at a time, followed by the vanilla extract.
- In another bowl, whisk together your flour, baking powder, baking soda, and salt. Gradually add this dry mix to your wet ingredients until just combined.
- Gently fold in the blackberries, lemon zest, and lemon juice.
- Using a cookie scoop, drop mounds of dough onto your prepared baking sheets, spacing them out.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack.
Notes
Chill the dough for 30 minutes for thicker cookies. Store leftovers in an airtight container for up to a week.
