Ingredients
  

For the Cookie Base
  • 1 cup butter, softened Use unsalted butter for better control of salt content.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Room temperature eggs mix better.
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
For the Flavor
  • 1 cup fresh blackberries, chopped Alternatives include blueberries or raspberries.
  • zest of 2 lemons Use a microplane for fine zest.
  • 1 tablespoon juice of 1 lemon Freshly squeezed is best.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
  3. Mix in the eggs, one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together your flour, baking powder, baking soda, and salt. Gradually add this dry mix to your wet ingredients until just combined.
  5. Gently fold in the blackberries, lemon zest, and lemon juice.
  6. Using a cookie scoop, drop mounds of dough onto your prepared baking sheets, spacing them out.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack.

Notes

Chill the dough for 30 minutes for thicker cookies. Store leftovers in an airtight container for up to a week.
