Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
- Add in the eggs one at a time, mixing until well combined. Then, stir in the lemon juice and lemon zest.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients.
- Gently fold in the chopped blackberries.
Baking
- Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, leaving some space between them.
- Bake for 10-12 minutes, or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Try different berries like raspberries or blueberries, or add white chocolate chips for a variation. Store in an airtight container at room temperature for up to a week.
