  • 1 teaspoon lemon zest Adjust to taste, the more the merrier!
  • 2 3/4 cups all-purpose flour Standard flour for structure.
  • 1 teaspoon baking soda Leavening agent for the cookies.
  • 1/2 teaspoon salt Enhances the flavors of the cookies.
  • 1 cup fresh blackberries, roughly chopped Use fresh for the best flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
  3. Add in the eggs one at a time, mixing until well combined. Then, stir in the lemon juice and lemon zest.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients.
  5. Gently fold in the chopped blackberries.
Baking
  1. Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, leaving some space between them.
  2. Bake for 10-12 minutes, or until the edges are golden.
  3. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Try different berries like raspberries or blueberries, or add white chocolate chips for a variation. Store in an airtight container at room temperature for up to a week.
