Method
Preparation
- Rub both sides of the ribeye steaks generously with blackening seasoning.
- In a large skillet, heat the olive oil over medium-high heat.
Cooking the Steak
- Add the steaks to the skillet, cooking them for about 4-5 minutes per side for medium-rare.
- Let the steaks rest for about 5 minutes after cooking.
Cooking the Shrimp Scampi
- In the same skillet, reduce the heat to medium and add the butter. Let it melt.
- Toss in the garlic and red pepper flakes, sauté for 1 minute until fragrant.
- Add the shrimp and cook until they turn pink, about 3-4 minutes.
- Pour in the white wine or broth and bring to a simmer, cooking down for about 2-3 minutes.
- Add lemon juice, season with salt and pepper, and stir well.
Assembly and Serving
- Slice the rested steak and arrange it on plates with the shrimp scampi on the side.
- Garnish with a sprinkle of fresh parsley.
Notes
For the blackening seasoning, you can make your own by blending paprika, cayenne pepper, thyme, and oregano. Make sure to rest the steak to keep it juicy. If wine isn't preferred, chicken broth works well too.
