Main Ingredients
  • 2 cups cooked chicken, shredded Rotisserie chicken is a great shortcut!
  • 4 slices crispy bacon Optional: add more for extra flavor!
  • 1 ripe tomato, diced
  • 1 cup butter lettuce Can substitute with any leafy green.
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Favorite bread or sandwich rolls Bonus points for toasting!

Method
 

Cooking
  1. Cook the bacon in a skillet over medium heat until crispy. Set aside on paper towels.
  2. In a medium bowl, combine the shredded chicken, diced tomato, mayonnaise, Dijon mustard, salt, and pepper. Mix until well combined.
  3. Toast the bread or rolls if desired.
  4. Layer the butter lettuce on the bottom slice of bread, add the chicken mixture, crispy bacon, and another layer of lettuce if desired. Top with the other slice of bread.
  5. Cut the sandwich in half or quarters and serve with chips or side salad.

Notes

For best flavor, enjoy the sandwich immediately. If preparing in advance, store the chicken salad separately from the bread to avoid sogginess.
