Preparation
- Preheat the oven to 325°F (160°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang.
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until moistened and press firmly into the bottom of the baking dish. Bake for about 10 minutes until golden.
- Beat the softened cream cheese until smooth. Mix in sugar and vanilla. Add eggs one at a time, mixing until just combined.
- Gently fold in the blueberries with a spatula.
- Pour the cheesecake mixture over the crust, spreading it evenly.
Baking and Cooling
- Bake the bars for about 30-35 minutes until the center is just set but still a bit jiggly.
- Let the bars cool at room temperature before refrigerating for at least 4 hours.
- Once chilled, lift the bars out using the parchment overhang and slice into squares.
Notes
Use a hot knife for clean cuts and consider topping with powdered sugar or whipped cream for presentation.
