Ingredients
  

For the Salad
  • 4 cups mixed greens (spinach, arugula, or whatever you have on hand)
  • 1 cup fresh blueberries the star of the show!
  • 1/2 cup crumbled feta cheese because everything's better with cheese
  • 1/4 cup sliced almonds or walnuts, if you prefer
  • 1/4 cup diced red onion for that zing!
For the Homemade Blueberry Balsamic Dressing
  • 1 cup fresh blueberries
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup, if you want to go vegan
  • 1/4 cup olive oil
  • to taste salt and pepper to taste

Method
 

Making the Dressing
  1. In a blender, combine the fresh blueberries, balsamic vinegar, and honey.
  2. Blend until smooth. Gradually add olive oil while blending to create a creamy emulsion.
  3. Season with salt and pepper to taste.
Assembling the Salad
  1. In a large bowl, toss together your mixed greens, fresh blueberries, crumbled feta, sliced almonds, and diced red onion.
  2. Just before serving, drizzle with your homemade blueberry balsamic dressing and toss gently to combine.
Serving
  1. Plate it, garnish with a few extra blueberries if you feel fancy, and prepare for compliments.

Notes

For extra zing in the dressing, add a teaspoon of Dijon mustard before blending. The salad can be prepped in advance; keep the dressing separate until serving to prevent sogginess.
