Ingredients
  

Vegetables
  • 1 small green cabbage, finely shredded
  • 1 small red cabbage, finely shredded
  • 2 large carrots, grated or shredded
Dressing
  • 1 cup mayonnaise The creamy, dreamy kind!
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey Or maple syrup, if you prefer.
  • 1 tablespoon Dijon mustard For that little kick.
  • Salt and pepper, to taste
Optional Add-ins
  • 1 cup sliced almonds or dried cranberries For extra crunch and sweetness.

Method
 

Preparation
  1. Start by shredding your cabbages and grating those carrots.
  2. In a bowl, whisk together the mayo, apple cider vinegar, honey, Dijon mustard, and season with a pinch of salt and pepper.
  3. In a large bowl, toss the shredded cabbages, carrots, and the dressing until well coated.
  4. If you’re feeling adventurous, drop in those almonds and cranberries.
Chill & Serve
  1. Cover and place it in the fridge for at least 30 minutes to let the flavors mingle.

Notes

Feel free to swap the veggies or add in some green onions, bell peppers, or jalapeños for heat.
