Ingredients

For the Bites
  • 1 sheet puff pastry, thawed Use store-bought puff pastry for convenience.
  • 8 ounces brie cheese, cut into 1-inch cubes You can substitute with other soft cheeses if desired.
  • 1 cup pecans, chopped Chop the pecans to ensure even distribution in the bites.
  • 1/4 cup bourbon Feel free to substitute with apple cider or orange juice.
  • 1/4 cup brown sugar For a richer flavor, use dark brown sugar.
  • 1 tablespoon butter Melted butter is used for cooking the pecan mixture.
  • 1 teaspoon vanilla extract
  • 1 egg beaten (for egg wash) Gives the bites a golden finish.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, melt the butter. Add the chopped pecans, brown sugar, bourbon, and vanilla extract. Stir until the sugar melts and the pecans are well coated (about 5 minutes).
  3. Lightly flour your work surface and roll out the puff pastry. Cut it into squares, approximately 2 inches wide.
  4. Place a cube of brie in the center of each square topped with a spoonful of the bourbon pecan mixture. Fold the corners of the pastry over the filling and pinch together to seal.
  5. Brush the tops of each bite with the beaten egg.
  6. Arrange the bites on a parchment-lined baking sheet and bake for 15-20 minutes, or until they are puffed and golden brown.
  7. Let them cool for a few minutes before serving warm.

Notes
