Preparation
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, melt the butter. Add the chopped pecans, brown sugar, bourbon, and vanilla extract. Stir until the sugar melts and the pecans are well coated (about 5 minutes).
- Lightly flour your work surface and roll out the puff pastry. Cut it into squares, approximately 2 inches wide.
- Place a cube of brie in the center of each square topped with a spoonful of the bourbon pecan mixture. Fold the corners of the pastry over the filling and pinch together to seal.
- Brush the tops of each bite with the beaten egg.
- Arrange the bites on a parchment-lined baking sheet and bake for 15-20 minutes, or until they are puffed and golden brown.
- Let them cool for a few minutes before serving warm.
Notes
These bites can be assembled ahead of time and refrigerated until you're ready to bake. Serve alongside a refreshing salad or your favorite dips.
