  • 2 cups frozen hash browns, thawed Can use freshly grated potatoes for a tastier option.
  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • Salt and pepper, to taste
For the Toppings
  • 4 large eggs
  • 1 cup diced bell peppers Feel free to mix colors!
  • 1 cup cooked sausage, bacon, or any protein you love
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the thawed hash browns, mozzarella cheese, egg, salt, and pepper. Mix well.
  3. Spread the mixture onto a baking sheet lined with parchment paper, pressing it into a circle or square to form your crust.
Baking the Crust
  1. Place your hash brown crust in the oven for about 20 minutes, until golden brown and slightly crisp.
Toppings Preparation
  1. While the crust bakes, whisk the eggs in a bowl and add salt and pepper.
  2. Sauté the diced bell peppers briefly in a pan until vibrant and just tender.
Assembly and Final Baking
  1. Remove the crust from the oven and layer the sautéed peppers, cooked protein, and pour the beaten eggs over the top.
  2. Sprinkle the shredded cheddar cheese on top.
  3. Bake for another 10-15 minutes, or until the eggs have set and the cheese is bubbly and golden.
Serving
  1. Sprinkle fresh parsley for garnish, slice, and serve warm.
