Brie and Blackberry Puff Pastry Swirls

Ingredients
  

For the swirls
  • 1 sheet puff pastry (thawed)
  • 8 ounces Brie cheese (cut into small pieces)
  • 1 cup fresh blackberries
  • 1 tablespoon honey
  • 1 teaspoon fresh rosemary (finely chopped)
  • 1 egg for egg wash
  • 1 pinch salt and pepper optional but enhances flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out your puff pastry sheet on a lightly floured surface to about 1/8 inch thick.
  3. Lay down your Brie cheese evenly across the puff pastry.
  4. Scatter the blackberries evenly on top of the Brie, drizzle with honey and sprinkle with rosemary. Optionally add salt and pepper.
  5. Gently roll the pastry tightly from one end to the other to form a log.
  6. Slice the log into 1-inch pieces and place them cut-side up on a lined baking sheet.
Baking
  1. In a small bowl, whisk together the egg with a splash of water for egg wash and brush it over the tops of the swirls.
  2. Bake in the oven for 15-20 minutes, or until the pastries are golden and puffy.
  3. Allow them to cool slightly before serving warm.

Notes

Keep ingredients cold for best results. Feel free to customize the filling with different fruits. Make ahead by refrigerating swirls before baking.
