Brie and Blackberry Puff Pastry Swirls with Honey & Rosemary

Ingredients
  

Main Ingredients
  • 1 sheet puff pastry, thawed
  • 1 cup fresh blackberries
  • 4 oz Brie cheese, cut into small pieces Bonus points if you leave some of the rind on!
  • 2 tablespoons honey
  • 1 teaspoon fresh rosemary, chopped You can substitute with 1/2 teaspoon dried.
  • 1 large egg, beaten For egg wash
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out your puff pastry on a lightly floured surface to about 1/8 inch thick.
  3. Spread the blackberries evenly across the pastry, leaving a small border around the edges.
  4. Sprinkle the pieces of Brie all over the top.
  5. Drizzle the honey on top of the cheese and blackberries.
  6. Sprinkle the rosemary and a pinch of salt over everything.
  7. Starting at one end, roll the puff pastry into a log as tight as possible without squishing the filling out.
  8. Slice the log into about 1-inch rounds to create the swirls.
  9. Place the swirls on a lined baking sheet and brush the tops with the beaten egg.
Baking
  1. Bake for 20-25 minutes or until puffed and golden brown.
  2. Let them cool for a few minutes before serving.

Notes

Don't worry about getting the pastry perfect, it's about the taste! You can substitute blackberries with raspberries or sliced strawberries if needed. Extra rosemary can be chopped and used in other dishes.
