Preparation
- In a skillet over medium heat, cook the bacon until it's crispy (about 6-8 minutes). Transfer to a paper towel-lined plate.
- Butter one side of each slice of bread.
- On the non-buttered side of four slices, layer the brie cheese, followed by the bacon, blackberries, and honey.
- Close the sandwiches with another slice of bread, buttered side up.
Grilling
- In the same skillet, grill the sandwiches for 3-4 minutes on each side until golden brown and the brie has melted.
- Slice and serve the sandwiches immediately.
Notes
Adjust the heat if the sandwiches brown too quickly. Serve with a simple arugula salad for a delightful lunch or light dinner. Other fruits like apples or pears can also be added for variation.
