  • 8 slices slices of bread Sourdough or whole grain works well.
  • 8 oz brie cheese, sliced
  • 8 slices crispy bacon
  • 1 cup blackberries
  • 2 tablespoons honey Optional: add a dash of rosemary for an aromatic twist
  • 2 tablespoons butter For buttering the bread

Method
 

Preparation
  1. In a skillet over medium heat, cook the bacon until it's crispy (about 6-8 minutes). Transfer to a paper towel-lined plate.
  2. Butter one side of each slice of bread.
  3. On the non-buttered side of four slices, layer the brie cheese, followed by the bacon, blackberries, and honey.
  4. Close the sandwiches with another slice of bread, buttered side up.
Grilling
  1. In the same skillet, grill the sandwiches for 3-4 minutes on each side until golden brown and the brie has melted.
  2. Slice and serve the sandwiches immediately.

Notes

Adjust the heat if the sandwiches brown too quickly. Serve with a simple arugula salad for a delightful lunch or light dinner. Other fruits like apples or pears can also be added for variation.
