Ingredients

  • 1 sheet sheet of puff pastry (thawed)
  • 8 oz brie cheese (cut into small pieces)
  • 1/4 cup cranberry sauce or fig jam for that sweet touch
  • 1 ea egg (beaten) for egg wash
  • to taste Fresh thyme or herbs optional, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out your thawed puff pastry on a lightly floured surface. Cut it into squares, about 3x3 inches.
  3. Place a piece of brie and a teaspoon of cranberry sauce or fig jam in the center of each pastry square. Add a sprinkle of fresh thyme if desired.
  4. Gently fold the corners of the pastry over the cheese and jam to create a pocket. Pinch the seams to seal them.
  5. Brush the tops of each pastry with the beaten egg.
Baking
  1. Arrange your Brie Bites on a baking sheet lined with parchment paper and bake for about 15-20 minutes or until they’re puffed up and golden brown.
  2. Once baked, let them cool for a few minutes before serving.

Notes

If your pastry seems a bit doughy, give it an extra couple of minutes in the oven. Experiment with different jams or add nuts for texture.
