Cookie Base
  • 1 cup unsalted butter Browned for added flavor
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 tablespoons instant coffee granules
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2.5 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Mix-Ins
  • 1 cup toffee bits
  • 1 cup chocolate chips Optional, but highly recommended

Method
 

Preparation
  1. In a medium saucepan, melt the butter over medium heat until it turns a beautiful golden brown and starts to smell nutty—about 5 minutes.
  2. In a large bowl, combine brown sugar, granulated sugar, and coffee granules. Pour the brown butter into this mix and stir until well combined.
  3. Add the egg and vanilla extract to the mixture, blending until smooth.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, stirring just until combined.
  5. Gently fold in the toffee bits and chocolate chips, if using.
  6. Cover the dough and let it chill in the refrigerator for at least 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Scoop out tablespoon-sized portions of dough and place them on a baking sheet lined with parchment paper.
  3. Bake for 10-12 minutes or until the edges are golden brown.
  4. Let them cool for a few minutes before serving.

Notes

Keep an eye on the butter while browning as it can burn quickly. If you can't find toffee bits, you can use chopped toffee candy bars. These cookies freeze well; shape dough into balls and freeze before baking.
