Method

Preparation
  1. Brown the Butter: In a medium saucepan over medium heat, melt the butter until it turns a lovely amber color with a nutty aroma (approximately 5-7 minutes).
  2. Mix the Sugars: In a large bowl, whisk together the browned butter (cool slightly) with brown sugar and granulated sugar until creamy.
  3. Add the Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and coffee granules. Gradually add this mixture to the butter mixture.
  5. Incorporate the Treats: Fold in the toffee bits and chocolate chips.
  6. Chill the Dough: Optional step—chill the dough for at least 30 minutes for better flavor.
Baking
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop tablespoon-sized balls of dough onto the baking sheet.
  3. Bake for about 10-12 minutes until the edges are golden.
  4. Allow cookies to cool for 5 minutes on the baking sheet before transferring to a wire rack.
Serving
  1. Enjoy warm cookies with a cup of coffee or milk.

Notes

For crispy edges, bake until the edges are golden brown while keeping the center soft. Optionally, sprinkle sea salt on top before baking for a sweet-salty twist.
