Ingredients

For the Hamburger Steak
  • 1 pound ground beef (80/20 is ideal for juicy steaks)
  • 1/4 cup breadcrumbs They really do make everything better
  • 1/4 cup finely chopped onions
  • 1 each egg
  • 1 teaspoon Worcestershire sauce
  • to taste Salt and pepper
For the Brown Gravy
  • 1 cup beef broth The heart of the matter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter
  • 1 cup sliced mushrooms Optional, but adds flavor
  • to taste Salt and pepper

Method

Preparation
  1. In a large bowl, combine the ground beef, breadcrumbs, chopped onions, egg, Worcestershire sauce, salt, and pepper. Mix until just combined.
  2. Shape the mixture into four equal patties, about 1 inch thick. Set aside.
Cooking
  1. In a large skillet, heat a drizzle of oil over medium-high heat. Add the patties and cook for about 4-5 minutes on each side until browned.
  2. Remove the patties from the skillet and add the butter and sliced mushrooms to the same pan. Sauté until the mushrooms are tender and golden brown.
  3. Sprinkle the flour over the mushrooms and stir to combine. Gradually whisk in the beef broth, scraping up any brown bits from the bottom of the pan. Continue whisking until the mixture thickens.
  4. Return the patties to the skillet and spoon the gravy over them. Let everything simmer together for about 5 minutes.

Notes

For thicker gravy, add more flour. If it gets too thick, a splash of beef broth will help.
