Ingredients
  

For the Brownies
  • 1/2 cup unsalted butter, melted 1 stick
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
For the Cheesecake Layer
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
To Layer
  • whipped cream (store-bought or homemade)
  • chocolate shavings or sprinkles optional

Method
 

Make the Brownies
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the melted butter and granulated sugar. Mix until combined (about 1 minute).
  3. Add the eggs one at a time, followed by the vanilla extract. Stir until well mixed.
  4. Now, add cocoa powder, flour, salt, and baking powder. Mix until just combined—don’t overdo it!
  5. Pour the batter into a greased 8×8 inch baking pan and bake for about 20-25 minutes. Check with a toothpick for doneness.
Prepare the Cheesecake Layer
  1. In a large bowl, beat the softened cream cheese until creamy (about 2 minutes).
  2. Add powdered sugar and vanilla extract to the creamed cheese. Mix until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
Assemble the Parfaits
  1. Once your brownies are cool, cut them into bite-sized squares.
  2. In serving glasses or jars, layer brownie pieces, cheesecake filling, and a little whipped cream. Repeat the layers until filled.
  3. Drizzle with chocolate shavings or sprinkles for garnish.
Chill and Serve
  1. Refrigerate the assembled parfaits for at least 1 hour before serving.

Notes

Baking Tips: Check brownies a minute or two before the recommended time. For whipped cream, chill your mixing bowl and beaters for better results. Brownies and cheesecake layer can be made a day in advance.
