Method
Make the Brownies
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the melted butter and granulated sugar. Mix until combined (about 1 minute).
- Add the eggs one at a time, followed by the vanilla extract. Stir until well mixed.
- Now, add cocoa powder, flour, salt, and baking powder. Mix until just combined—don’t overdo it!
- Pour the batter into a greased 8×8 inch baking pan and bake for about 20-25 minutes. Check with a toothpick for doneness.
Prepare the Cheesecake Layer
- In a large bowl, beat the softened cream cheese until creamy (about 2 minutes).
- Add powdered sugar and vanilla extract to the creamed cheese. Mix until smooth.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
Assemble the Parfaits
- Once your brownies are cool, cut them into bite-sized squares.
- In serving glasses or jars, layer brownie pieces, cheesecake filling, and a little whipped cream. Repeat the layers until filled.
- Drizzle with chocolate shavings or sprinkles for garnish.
Chill and Serve
- Refrigerate the assembled parfaits for at least 1 hour before serving.
Notes
Baking Tips: Check brownies a minute or two before the recommended time. For whipped cream, chill your mixing bowl and beaters for better results. Brownies and cheesecake layer can be made a day in advance.
