Ingredients
  

For the Bruschetta
  • 1 piece Baguette, sliced into ½ inch pieces or your favorite crusty bread
  • 2-3 pieces Ripe Tomatoes, diced seasonal is best
  • 8 oz Burrata Cheese because, why skimp?
  • 2 tbsp Olive Oil for drizzling and diving into flavor
  • 1-2 cloves Garlic, minced because we may not ward off vampires, but we’ll ward off boring dishes
  • Salt & Pepper to taste
  • Fresh Basil Leaves for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange your baguette slices on a baking sheet. Brush lightly with olive oil and sprinkle with a pinch of salt.
  3. Toast in the oven for about 5-7 minutes, or until golden and crisp.
  4. In a bowl, combine the diced tomatoes, minced garlic, a drizzle of olive oil, salt, and pepper. Stir gently and let it sit for a few minutes.
Assembly
  1. Once your baguette slices are toasted, place the tomato mixture on each slice.
  2. Top each with a piece of creamy burrata.
  3. Garnish with fresh basil leaves.
  4. Serve immediately.

Notes

Mozzarella or ricotta can be used as substitutes for burrata. Add a splash of balsamic glaze for extra flavor. Store leftover tomato mixture separately and keep toasted baguette slices in an airtight container to maintain crunch.
