Ingredients
  

For the Bruschetta
  • 1 piece French baguette (or gluten-free bread if needed)
  • 8 oz burrata cheese The luxurious creamy cheese.
  • 2 cups cherry tomatoes, diced
  • to taste fresh basil leaves The more, the merrier!
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar A little zing never hurt anyone.
  • to taste salt and pepper
  • optional crushed red pepper For a kick.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Slice your baguette into 1-inch thick pieces. Arrange on a baking sheet and drizzle with olive oil. Bake until golden and crispy—about 5-7 minutes.
  2. In a mixing bowl, combine diced cherry tomatoes, balsamic vinegar, olive oil, salt, pepper, and fresh basil. Stir gently and adjust seasoning to taste.
Assembly
  1. Remove the toasted bread from the oven. Top each slice with the tomato mixture and add a piece of burrata on top.
  2. Drizzle more balsamic vinegar if desired and sprinkle with crushed red pepper.
Serving
  1. Transfer the bruschetta to a platter and serve immediately.

Notes

For best results, do not top the bread until just before serving to prevent sogginess. Customize with additional toppings like avocado or roasted garlic.
