Ingredients
  

For the Bruschetta
  • 1 piece French baguette or ciabatta if you’re feeling fancy
  • 1 piece ripe burrata cheese the creaminess is out of this world
  • 1 cup cherry tomatoes, halved
  • 1 clove garlic, minced
  • 1 cup fresh basil leaves, roughly torn
  • to taste extra virgin olive oil for drizzling
  • to taste balsamic glaze optional but highly recommended
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into about 1-inch thick pieces and arrange them on a baking sheet. Drizzle with olive oil.
  3. Toast the bread in the oven for about 5-7 minutes, until golden and crispy.
  4. In a bowl, mix the tomatoes with minced garlic, salt, pepper, and torn basil leaves. Toss gently.
Assembly
  1. Once the bread is toasted and cool, top each piece with a scoop of burrata followed by the tomato mixture.
  2. Drizzle with balsamic glaze and sprinkle with fresh basil.
  3. Serve immediately.

Notes

For best results, assemble just before serving to keep the bread crunchy. You can add a sprinkle of red pepper flakes for a spicy kick.
