  • 1 medium butternut squash, peeled and diced
  • 2 pieces apples (Granny Smith or Honeycrisp), cored and chopped
  • 1 pound favorite sausage (sweet or spicy Italian recommended)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon cinnamon
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • ½ cup vegetable broth
  • 2 tablespoons maple syrup adds a touch of sweetness

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add olive oil. Sauté chopped onion until soft and translucent.
  3. Add sausage to the skillet and cook until brown and crumbly.
  4. In a large bowl, combine the cooked sausage and onion mixture with diced butternut squash, chopped apples, minced garlic, thyme, cinnamon, salt, and pepper. Drizzle with vegetable broth and maple syrup, and toss well.
  5. Transfer the mixture into a greased casserole dish and bake uncovered for about 30-40 minutes, or until the squash is tender.
  6. Serve hot and enjoy!

Notes

Sausage substitutes can include ground turkey or meat alternatives. Leftovers can be stored in an airtight container for up to three days. Add more vegetables like carrots or parsnips if desired.
